  • 45 cherry tomatoes (for topping)
  • 1 lemon (sliced)
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 2 cloves garlic (mashed)
  • 2 teaspoons dried mint
  • 2 cups hot water (divided)

Instructions

  1. Cook rice in boiling water until just tender; drain and set aside.
  2. In a bowl, mix cooked rice with onion, garlic, tomato, tomato paste, parsley, dried mint, black pepper, paprika, salt, and lemon juice.
  3. Preheat the oven to 375°F (190°C). Prepare bell peppers by removing tops and seeds.
  4. Fill each pepper with the rice mixture and place them upright in a baking dish.
  5. Whisk together olive oil, mashed garlic, tomato paste, dried mint, and hot water; pour around the peppers.
  6. Top each pepper with cherry tomatoes and lemon slices; cover with foil.
  7. Bake for about 40 minutes or until peppers are tender.
