- 2 tablespoons tomato paste
- 2 cloves garlic (mashed)
- 2 teaspoons dried mint
- 2 cups hot water (divided)
Instructions
- Cook rice in boiling water until just tender; drain and set aside.
- In a bowl, mix cooked rice with onion, garlic, tomato, tomato paste, parsley, dried mint, black pepper, paprika, salt, and lemon juice.
- Preheat the oven to 375°F (190°C). Prepare bell peppers by removing tops and seeds.
- Fill each pepper with the rice mixture and place them upright in a baking dish.
- Whisk together olive oil, mashed garlic, tomato paste, dried mint, and hot water; pour around the peppers.
- Top each pepper with cherry tomatoes and lemon slices; cover with foil.
- Bake for about 40 minutes or until peppers are tender.
