  • 4 eggs

Instructions

  1. Sauté the sliced onion, garlic, and fresh chili (if using) in a non-stick skillet over medium heat until the onions are translucent.
  2. Add the canned sardines along with 1/4 can of water.
  3. Optionally crush the sardines gently with a spatula for a finer texture.
  4. Season the mixture with fish sauce, sugar, and optional chili powder, stirring well.
  5. Stir continuously until the mixture starts to boil. Gently add the eggs into the mixture.
  6. Lower the heat to medium-low and cover the skillet until eggs are cooked to your liking.
  7. Serve hot with rice or bread and garnish if desired.
