  • 800 grams icing sugar
  • Carnation caramel (approximately one tin)

Instructions

  1. Preheat the oven to 180°C (356°F) and grease two 6-inch round cake tins.
  2. In a mixing bowl, cream together softened butter, caster sugar, and light brown sugar until pale and fluffy.
  3. Add vanilla bean paste and treacle; mix well.
  4. Incorporate eggs one at a time, mixing after each addition.
  5. Sift in self-raising flour and gently fold until combined.
  6. Divide batter between tins and bake for 32–40 minutes or until a toothpick comes out clean.
  7. Cool cakes in tins for about 10–15 minutes before transferring them to a wire rack to cool completely.
  8. Trim tops for even layers and slice each cake in half horizontally.
  9. Prepare buttercream by beating softened butter until fluffy; gradually add icing sugar and mix until combined.
  10. Stir in vanilla bean paste and Carnation caramel; adjust consistency with milk if necessary.
  11. Assemble the cake with layers of buttercream and caramel drizzle between each layer, then apply a crumb coat followed by a final layer of buttercream.
  12. Drizzle warm caramel over the top and decorate as desired.
