- 3/4 cup (180ml) milk
- 1/2 cup plus 2 tbsp (140g) light brown sugar
- 1/4 cup (56g) unsalted butter, cubed
- 1 cup (100g) toasted chopped pecans
- 1 1/4 cups (280g) unsalted butter, room temperature
- 5 cups (575g) powdered sugar
- 1/2 cup (120ml) pecan pie filling
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together flour, cinnamon, baking powder, and salt.
- In a separate bowl, cream unsalted butter, vegetable oil, sugar, and light brown sugar until fluffy.
- Add eggs and vanilla extract; mix until incorporated.
