  • 1 cup butter (softened but not melted)
  • 1 1/2 cups granulated sugar
  • 3 cups cake flour (spooned & measured carefully)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup milk (2% milkfat)
  • 1 teaspoon almond extract
  • 3/4 cup egg whites plus 3 tablespoons
  • 3 cups cold heavy whipping cream
  • 1/3 cup powdered sugar
  • Fresh strawberries and blueberries

Instructions

  1. Prepare the strawberry filling by simmering strawberries with sugar and water. Thicken with cornstarch and let cool.
  2. For the blueberry filling, repeat the same steps using blueberries.
  3. Preheat oven to 350°F (175°C). Cream butter and sugar, then mix in dry ingredients, milk, almond extract, and egg whites until combined. Bake in three greased round pans for 30–40 minutes.
