  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1 can (14-ounce) diced tomatoes

  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 preserved lemon, chopped
  • 1/2 cup green olives
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley

Instructions

  1. Mix spices (paprika, cumin, ginger, cinnamon, turmeric, cayenne pepper, salt) in a bowl; rub over chicken thighs.
  2. Heat olive oil in a heavy-bottomed pot over medium-high heat; brown chicken on both sides for about 5 minutes each. Remove and set aside.
  3. In the same pot, sauté chopped onion until softened (5 minutes), add minced garlic and tomato paste; cook for another minute.
  4. Pour in chicken broth while scraping up browned bits; add diced tomatoes and return chicken to the pot.
  5. Bring to a boil; reduce heat to low and simmer covered for 30 minutes until chicken is tender.
  6. Stir in preserved lemon pieces and green olives; simmer uncovered for another 10 minutes before serving.
