- 4–5 medium organic russet potatoes, peeled and cubed
- 1 Tbsp extra virgin olive oil
- 1 Tbsp unsalted butter
- 1/2 red onion, chopped
- 6 garlic cloves, minced
- 2 tsps On Everything All-Purpose Blend
- 1 tsp smoked paprika
- 2 Tbsps white cooking apple vinegar
- 4 cups organic vegetable stock/broth
- 1 cup organic heavy cream
- 1–2 cups freshly-grated sharp cheddar cheese
- 1 cup kale (optional)
Instructions
- Peel and cube the potatoes; chop the onion and mince the garlic.
- In a slow cooker, heat olive oil and butter over medium heat; sauté onion until translucent, then add garlic for another minute.
- Add cubed potatoes, seasoning blend, smoked paprika, vinegar, and vegetable broth; stir well.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until tender.
- Use an immersion blender to puree the soup to your desired texture; gradually stir in heavy cream.
- Mix in grated cheddar until melted; fold in kale if desired.
