  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1/4 teaspoon Coriander
  • 2 Tablespoons Soy Sauce
  • 2 Cloves Garlic (minced)
  • 1/2 Cup Cilantro (chopped)
  • 1 Cucumber (peeled, seeded and diced)
  • 1 Large Mango (peeled and diced)
  • 1 Small Avocado (Diced)
  • 1/2 Jalapeno (seeded and minced)
  • 1/4 Cup Red Pepper (diced)
  • 1/4 Cup Red Onion (diced)
  • 1 1/2 Limes (juiced)
  • 1 Tablespoon Sugar
  • 1 Tablespoon White Vinegar
  • 1 Tablespoon Canola Oil
  • 1/3 Cup Cilantro (chopped)
  • Coconut Rice

Instructions

  1. Marinate the Chicken: In a bowl, whisk together lime zest, orange juice, lime juice, canola oil, honey, cumin, chili powder, soy sauce, garlic, and chopped cilantro. Place chicken in a resealable bag or dish and pour the marinade over it. Seal tightly and refrigerate for at least 2 hours or overnight.
  2. Prepare the Mango Salsa: In another bowl, combine diced cucumber, mango, avocado, jalapeno, red pepper, red onion, lime juice, sugar, white vinegar, canola oil, and cilantro. Mix gently and set aside.
