  • 1 lb ground beef (or lamb)
  • 1/2 cup long-grain rice
  • 2 cloves garlic
  • 1 small onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (or 1 tsp dried)
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh dill or 1 teaspoon dried
  • Juice of 1 lemon
  • Chopped parsley or dill, for garnish
  • Lemon wedges, for serving

Instructions

  1. Boil the onions in salted water for 10-12 minutes until softened. Let cool, then separate into cups.
  2. In a skillet, sauté chopped onion and garlic in olive oil. Add ground beef and cook until browned. Stir in rice, parsley, mint, allspice, cinnamon, salt, and pepper.
  3. Stuff each onion cup with the filling and place seam-side down in a greased casserole dish.
  4. Prepare the sauce by cooking garlic in olive oil, then adding crushed tomatoes, broth, oregano, dill, and lemon juice. Simmer for 5–7 minutes.
  5. Pour the sauce over the stuffed onions and bake covered at 375°F for 45 minutes. Remove foil and bake an additional 20-30 minutes.
