  • 115 g (1 stick) Unsalted Butter
  • 4 Room Temperature Eggs
  • 200 g (1 cup) Granulated Sugar
  • 1 ½ tsp Vanilla Extract
  • 90 g (¾ cup) Flour
  • 30 g (¼ cup) Unsweetened Cocoa Powder
  • ½ tsp Salt
  • 10 Crushed Lotus Biscoff Cookies + 4 for decoration
  • 12 tsp Lotus Biscoff Spread

Instructions

  1. Preheat the oven to 350°F (180°C) and line an 8-inch baking pan with parchment paper.
  2. Melt the butter and baking chocolate in a heatproof bowl using a double boiler or microwave until smooth.
  3. In a large mixing bowl, whisk together eggs, sugar, and vanilla extract until fluffy.
  4. Add the melted chocolate mixture to the egg mixture and whisk until combined.
  5. Sift in flour, cocoa powder, and salt; fold gently with a spatula until just combined.
  6. Fold in crushed Biscoff cookies evenly throughout the batter.
  7. Pour the brownie batter into the prepared pan and smooth out with a spatula.
  8. Dollop teaspoons of Biscoff spread on top and swirl it into the batter using a knife.
  9. Bake for 30–35 minutes or until a toothpick inserted comes out with moist crumbs.
  10. Allow cooling completely before cutting into squares.
