  • 16 oz. bow tie pasta, cooked and cooled
  • 1½ cups corn kernels (about 2 ears of corn)
  • 1½ cups cherry tomatoes, halved
  • ½ of a small red onion, chopped or thinly sliced
  • 2 Tbsp cilantro, finely chopped
  • ½ cup plain Greek yogurt
  • ¼ cup fresh lime juice
  • ¼ cup cilantro, roughly chopped (leaves & stems are ok)
  • 2 garlic cloves
  • ½ tsp salt
  • ⅛ tsp cayenne
  • 12 avocados, diced (optional)
  • Cotija cheese, crumbled (optional)

Instructions

  1. Prepare the dressing by blending Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne in a food processor until smooth. Refrigerate.
  2. In a large bowl, combine cooked pasta, corn, halved tomatoes, chopped onion, and cilantro.
  3. Pour the dressing over the pasta mixture and toss until well coated.
  4. Serve with diced avocado and crumbled cotija cheese if desired.
