- 6.5 tbsp softened butter
- 1/2 cup granulated sugar
- 1/2 cup lukewarm milk
- 2 1/4 tsp fast action yeast
- 5 egg yolks
- 2.5 cups milk
- 1/4 cup cornstarch
- 1/3 cup sugar
- lemon zest
Instructions
- In a mixing bowl or stand mixer, combine both flours, sugar, yeast, and salt. Add softened butter and mix until crumbly.
- In a separate bowl, whisk eggs with lukewarm milk and vanilla paste. Gradually add to dry ingredients until a smooth dough forms.
- Cover the dough and let it rise until doubled in size (about 90 minutes).
- Shape the dough into circles using a cutter and let them rise again for about 30 minutes.
- Heat oil to about 350°F (175°C) and fry the dough rounds until golden brown on both sides.
- Prepare the pastry cream by cooking egg yolks, cornstarch, sugar, milk, vanilla paste, and lemon zest until thickened. Fill cooled Bomboloni with pastry cream.
