  • 50 g sugar
  • 7 g instant dry yeast
  • 5 g salt
  • 1 large egg
  • 130 g whole milk
  • 85 g unsalted butter (softened at room temp)
  • 250 g frozen blueberries
  • 125 g granulated sugar
  • 2 tsp lemon juice
  • 100 g cream cheese (full fat)
  • 25 g unsalted butter (softened at room temp)
  • 100 g powdered sugar (sifted)
  • 1/4 tsp vanilla paste
  • 1 tiny pinch salt

Instructions

  1. Prepare the tangzhong by cooking 100 g of whole milk with 20 g of bread flour until thickened.
  2. In a bowl, combine 360 g of bread flour, 50 g sugar, yeast, and salt. Add the tangzhong, an egg, and another portion of whole milk. Mix until combined.
  3. Knead in 85 g softened butter until smooth.
  4. Let the dough rise for about an hour until doubled in size.
  5. For the filling, cook frozen blueberries with sugar and lemon juice until syrupy.
  6. Roll out the dough, spread the filling, roll tightly into a log, slice into rolls, and place on a baking sheet to rise again before baking at 180°C (350°F) for about 25 minutes.
  7. For the frosting, beat cream cheese with butter and powdered sugar until creamy.
