Ingredients
- 2 ½ cups fresh cherries (or frozen)
- 1 tablespoon white sugar
- 100 g dark chocolate (70% cocoa solids)
- 113 g unsalted butter
- 3 large eggs, room temp
- 1 cup white granulated sugar
- ¼ cup dark brown sugar, packed
- 1 ½ teaspoon vanilla extract
- 130 g plain flour (all-purpose flour)
- 25 g cocoa powder
- ¼ teaspoon salt
- ¾ cup whipping cream
- 100 g milk chocolate, shaved
Instructions
- Preheat your oven to 350°F (180°C) and line an 8×8 inch baking tin with baking paper.
- Pit and quarter the cherries, mixing half with white sugar to macerate for 10 minutes.
- Melt the dark chocolate and butter together in a heatproof bowl.
- In a separate bowl, whisk eggs, granulated sugar, and brown sugar until light and fluffy.
- Combine the melted chocolate mixture with the egg mixture, stirring well.
- Sift in flour, cocoa powder, and salt; gently fold until just combined.
- Lightly mash the macerated cherries and fold them into the batter.
- Pour into the prepared tin and bake for 40-45 minutes or until a toothpick inserted comes out with sticky crumbs.
- Allow to cool completely before adding whipped cream and garnishing with remaining cherries.
